Don't be alarmed by the title, the only cheese in this pie is cream cheese, and it's delicious. Here in Colorado there are no pie places that I've found as of yet. Back home we have Baker's Square and their pies are delicious. My two favorites are the french silk and the lemon supreme, which I didn't really like as a kid but it has definitely grown on me since then. My mom told me a story about how my dad, my grandparents, and herself were all planning going to go on a diet in the new year. That New Year's Eve they got a lemon supreme pie from Baker's Square, split it into four humongous pieces and ate them as last gluttonous farewell before their diets started the next day. That's how good this pie is.

Anyways, my grandma sent me a recipe that she said was similar to the Baker's Square Lemon Supreme Pie. Corey and I are going to a cookout at a friends tomorrow and so I decided to try out the Golden Lemon Cheese Pie recipe and bring that. From the licks of the filling I tasted while making this pie I think it's going to be very similar to the Baker's Square version. Follow the page break to get the recipe!
Golden Lemon Cheese Pie
Cream Cheese Filling:
- 8 oz softened cream cheese
- 1 can condensed sweetened milk
- 1/3 cup fresh lemon juice
- 1 tsp. vanilla
- 9" baked crust ( you can use a pre-made version)
Lemon Topping:
- 1/3 cup of sugar
- 1 Tbsp. cornstarch
- 1/2 cup of water
- 1/4 cup of lemon juice
- 1 egg yolk
- 1 Tbsp. of butter
Recipe:
Beat cream cheese until fluffy; add milk slowly, beat until smooth.
Stir in lemon juice and vanilla. Pour into crust. Chill and top with lemon topping. Can serve with whipped cream.
Lemon Topping
In pan combine 1/3 cup sugar and 1 tablespoon cornstarch. Add 1/2
cup water, 1/4 cup lemon juice and 1 egg yolk. Mix well over medium
heat; stir until thick. Remove from heat. Add 1 tablespoon butter and
stir. Cool before putting on top of cheese
filling.
It doesn't seem like you'll be able to fit anything on top of the cream cheese, but you will! | | |

I cheated and used a store bought graham cracker crust mainly to save time and also because I'm tired from the weekend out in the mountains. All in all this pie only took me an hour to assemble and I'm letting it chill overnight. I also opted out of whipped cream
because I was too lazy to whip some up because I wanted to show you what the top of the pie would look like. I'm going to put Corey to work later to whip some cream up for me! If you make this tell me how you like it!
